Target Market
In a perfect world, restaurant operators would discover a hot market and then build a restaurant concept to serve that market. The reality is that most restaurants are started because the owner of that restaurant knows how to do something very well (e.g. cook, serve, manage the front-of-house, manage the kitchen, etc.). Occasionally, through trial and error, that restaurant discovers it does indeed serve a hot market. Unfortunately, far too often, businesses simply get by without any real focus on a market.
